Garlic Sauce for Grilled Eggplant
- 1 Tbsp rice vinegar
- 1 Tbsp low-sodium soy sauce
- ½ Tbsp sesame oil
- 1 tsp crushed red pepper flakes
- 3–4 garlic cloves
- 1–2 large eggplants
- ½ cup extra-virgin olive oil
- Salt
- Pepper
- Chopped mint (for garnish)
Grill eggplant rounds, zucchini, capsicum with olive oil, salt and pepper on bbq.
